I’ve made it my own by mixing up the flour and varying the stuff that goes inside.

2 ½ cup flours, mixed by your preference. I recommend 1 cup whole wheat, ½ cup corn meal, ½ cup flax meal, ½ cup buckwheat

2 tsp baking powder

½ tsp salt

2 eggs
-
1 ⅓ cup milk
-
1 tbsp sugar

Lots of fresh berries (any are delicious) and mashed banana, to taste and as the season dictates
Directions:

Preheat your skillet if cast iron, as this material takes time to heat up. Key is a preheated item but on medium low.

Sift together the flours, baking powder and salt.

Separately, whisk the egg, milk, sugar and banana.

Combine, but minimize mixing to keep them light and fluffy.

Fold in berries, or mush them up if your kids prefer

Use an ice cream scoop to pour batter on a hot, oiled griddle or pan. Optionally, pour into a metal cookie cutter for a fun shape.

Turn when they bubble.
