Chicken Soup (or Jewish Penicillin) Recipe 1

One chicken carcass, with as many bones as possible

One whole onion, outer layer removed

3 large carrots, chopped into big pieces

3 large stalks of celery, chopped into big pieces

2 parsnips, chopped into big pieces

1 large bunch of kale, center rib removed, diced or pureed

1 bunch of fresh dill, tied with a rubber band

1 tbsp salt

pepper to taste

 

Put all the ingredients into a slow cooker or large pot, veggies on the bottom.  Fill with water, leaving some room.  If slow cooker, cook on high for 4-6 hours.  If stove top, bring to a boil, reduce to simmer and cook covered for 4-6 hours.  Discard bones, onion and dill.
